COOKING BAMBOO CHICKEN - My Favourite Filipino Food

THERE'S SOMETHING ABOUT BAMBOO when it comes to cooking food - the meat just retains its juicy tenderness. The flavours really get imparted into the dish, and it's a sustainable cooking vessel.

And in my time in the Philippines, especially in Mindanao, this dish has been one of my favourites.

Bamboo Chicken - with native onuk, as the T'Boli call it, is absolutely sublime. And we cooked it with all the ceremony that it deserves.
